Oysters is one of the finest establishments to open its doors in Tyrone in recent years, led at the helm by local husband and wife team, Kevin & Caroline Clarke. Since its inception in 2007, the restaurant has matured magnificently from its origins as a bistro venue to a more evidently defined fine-dining restaurant, catapulted in more recent times into the dining spotlight by its ever-growing list of accolades and award acquisitions. The ethos at Oysters is to strive to create an environment where exquisite food and select wines, enhanced by exceptional customer service creates a memorable and unparalleled dining experience.
Whilst Kevin heads up the day to day running and general management of the restaurant, Caroline takes responsibility for interiors, general administration activities, personnel and marketing.
Seasonally-led menus are changed often to reflect the availability of local foods – meat from local butcher, Mc Carrons Butchers, Raphoe (also an award winning beef breeder), fish fresh from Greencastle Fish Market, game sourced from Baronscourt Gaming Estate, exclusive rights in the locality to sell organic ice-cream from Glastry Farm, Fruit & Vegetables from Season Harvest, Claudy. Chef’s ‘Speciality Dishes’ inject an added dynamism to the evening Á la Carte Menu, with desserts, breads and truffles produced daily by the patisserie chef. 2011 heralded the launch of a new retail range of specialist breads, jams, chutneys and dressings. A carefully selected wine list represents excellent value and choice.
Benefiting from its proximity to the local theatre, Oysters has been honoured to host a number of celebrity diners, reflected in photos available for viewing both at the entrance to the restaurant, and within Oysters’s Facebook gallery. It is always a delight for diners to find themselves seated next to an impromptu visit by a celebrity diner pre-performance. You just never know who might be dining at the next table!!!
