Hospitality was in our blood and history so it seemed inevitable that, one day, we would seek to fulfil our dream of embarking upon our own venture.
It was destiny when Oysters Restaurant became available to us at the outset of 2007 and at a time when Caroline was winding up her 20 year career in manufacturing. Kevin did what he does best and established himself firmly at the heart of the business in Patrick Street whilst Caroline adopted the role of looking after the behind the scenes side of the business. They say a husband and wife should never work together but, as a team, we have made it work. The debate still continues however as to who the BOSS actually is!!!!
That said, cliched though it might be, but certainly undeniable, teamwork garners success and we are ever indebted to the soldiers who have formed our team over the years. Today, with the work of our kitchen team led by Head Chef Niall Gorham who continues to deliver culinary masterpieces over and over again, coupled with our front of house team who strive to carry that essence of customer service that has become synonymous with the restaurant, our love for what we do at Oysters remains strong. All your individual contributions have been invaluable.
We couldn’t not mention also our mini bosses, our daughters, Michaela and Mia, who have with us, lived and breathed the business over the past 15 years.
However, our customers are the real success story. You have been the stalwarts of our journey at Oysters, never wavering in your support whilst encouraging our efforts all the way. For that we will be eternally grateful.
